A Passion for Cuisine
This cookbook – many years in the making – grew out of numerous conversations with people, most of which focused on technique rather than ingredients. Discussions would also quickly move from the “how” to the “why”. Cooking is science. Understanding why certain foods interact with each other the way they do or change under particular conditions is what ultimately will allow food lovers to put their own stamps on their culinary creations, beyond the base recipe.
I share a passion with many for using the freshest seasonal ingredients, and in California, we’re very lucky to have an abundant variety everywhere we turn. I grew up going to farm stands with my mom and dad, so I learned how to be picky from day one. You will find this same passion and commitment to excellence in all my work - from event services to the culinary insights I share in my cookbook.
I want to thank my wife for her help in seeing this cookbook through to the final product. She was very adamant, as a daily cookbook user herself, that the ingredients be easy to find. She consistently kept me on track in terms of adapting those recipes which included esoteric ingredients that only professionals could procure.
I also want to thank her for testing the recipes without me by her side to ensure YOUR success. As she put it, “This book does not come with a clone of Chef Kel as each buyer’s own personal cooking instructor.” Enjoy!
